When it comes to cutting waterlily types, it often leads to some head scratching for the novice. They will often set their main flower below 2 vigorous side buds that quickly grow above the main bloom. You can either disbud the side buds at an early stage or cut the stem deep when the main flower is ready and snip off the side shoots. Or, let them all bloom- I like to keep the side buds because they help protect the main bloom when I am packing bunches for transport to florists.
